3 bell peppers — halved, seeds and ribs removed
About 4 cups cooked, shredded chicken breast (or use a rotisserie chicken for a quick shortcut)

4 oz cream cheese (room-temperature for easy mixing)
4 oz grated cheddar cheese (or a cheddar variety you prefer) — mix most into the filling, reserve a little for topping.
1 teaspoon paprika and ½ teaspoon onion powder (optional but adds warmth)
2 scallions (chopped — for a fresh pop)

Preheat your oven to 350°F (about 175°C)
Prepare the bell peppers: slice them in half lengthwise, remove seeds and ribs. If you like — leave the little stem “handle” for a pretty presentation.
In a large bowl, combine the shredded chicken, salsa verde, cream cheese, paprika, onion powder, and most of the grated cheddar (save a bit for topping). Stir until well blended.
Stir in the chopped scallions. Taste — and adjust salt or seasoning if needed.
Spoon the creamy mixture evenly into each pepper half. Sprinkle the reserved cheddar on top.
Place the stuffed peppers in a baking dish, cover with foil, and bake for 45 to 60 minutes — or until peppers are tender and the cheese is melted & bubbly.
Let them rest for a few minutes, then serve warm.
