Fall recipes always feel like little invitations from the Lord to slow down, breathe, and enjoy the simple gifts He gives us. Today I made a side dish that tastes like warmth, comfort, and a hug straight from the oven — Honey-Roasted Butternut Squash with Cranberries & Feta.
I actually filmed myself making this over on TikTok (you can watch it at @jacciblooms), and as I was roasting the squash, I realized how much joy I find in cooking again. These simple, creative moments in the kitchen are one of the ways God has been rebuilding my heart — and rebuilding my home — from the inside out. This was the very first time I had cooked with butternut squash, and so it was a learning experience for me as well.

🥣 Ingredients
4 cups butternut squash, peeled and cubed
2 tbsp olive oil
1 tbsp pure maple syrup
1 tbsp honey
½ tsp cinnamon
Salt and black pepper, to taste
½ cup dried cranberries
¼ cup crumbled feta cheese (cotija, goat cheese, or mozzarella also work!)
1 tbsp chopped fresh parsley
🍯 How to Make It
1️⃣ Preheat & Prepare
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper and drizzle lightly with olive oil. That first warm scent already feels like fall.
2️⃣ Toss the Squash
In a large bowl, combine the squash cubes with olive oil, maple syrup, honey, cinnamon, salt, and pepper.
Stir until every piece is glossy and coated.
3️⃣ Roast to Perfection
Spread the squash onto your baking sheet in an even layer.
Roast for 25–30 minutes, flipping halfway through, until the edges caramelize into deep golden bites.
4️⃣ Add Cranberries
During the last 5 minutes, sprinkle dried cranberries over the top.
They’ll soften and soak in that sweet maple-honey glaze.
5️⃣ Finish & Serve
Remove from the oven and immediately sprinkle with feta and parsley.
The feta softens just slightly — creamy, tangy, and perfect against the sweetness of the squash.
