Deviled Egg Potato Salad

This is my son’s favorite potato salad… and my husbands as well — it’s the perfect mix of creamy potato salad and deviled-egg flavor. I also made a TikTok video showing how I put it together, so be sure to check that out on my page @jacciblooms!

This is the basic recipe that I pulled from the web. But, it’s easily customizable to make it your own.

Ingredients

From The Gracious Wife:

  • 4 pounds Yukon Gold potatoes (or red potatoes), about 8 large

  • 1 dozen hard-boiled eggs

  • 1 ½ cups mayonnaise

  • ¼ cup yellow mustard

  • 2 tablespoons white vinegar

  • 2 tablespoons dill pickle relish

  • Salt & pepper to taste

  • Paprika for garnish (optional)

Instructions

  1. Cook the Potatoes
    Halve the potatoes and boil them for about 15 minutes until fork-tender. Drain and allow them to cool. Peel while warm if desired, then chop into cubes.

  2. Hard-Boil the Eggs
    Boil the eggs, cool them in ice water, peel, and slice them in half. Separate yolks from whites.

  3. Make the Dressing
    Mash the egg yolks in a bowl. Add mayonnaise, mustard, vinegar, and dill relish. Stir until smooth.

  4. Combine Everything
    Chop the egg whites. Add chopped potatoes and egg whites to a large bowl. Pour dressing over the top and gently stir to combine.

  5. Season & Chill
    Add salt and pepper to taste. Garnish with paprika if you’d like. Refrigerate at least 1 hour before serving.
